Ingredients:
- 8 oz. Honey Smoked Salmon
- 8 oz. soba noodles
- Juice of one lemon
- 4 Tbsp soy sauce
- 3 Tbsp Mirin
- 2 tsp finely grated ginger
- 2 tsp honey
- 1 tsp sesame oil
- 2 cups fresh spinach
- 1 cup edamame, shelled
- Sesame seeds and sliced green onions for garnish
Directions:
Step 1
Prepare soba noodles according to the package.
Step 2
Combine lemon juice, soy sauce, Mirin, ginger, honey, and sesame oil. Add warm water as necessary to taste, then dress noodles with about ½ of the mixture.
Step 3
Add spinach leaves and edamame and mix well.
Step 4
Top with Honey Smoked Salmon and drizzle remaining dressing over the whole dish. Garnish with sesame seeds and green onions.
Step 5
Serve and enjoy!
