  • What are Polyunsaturated fats?

Polyunsaturated fats are used to build cell membranes and the covering of nerves. They are needed for blood clotting, muscle movement, and inflammation.

A polyunsaturated fat has two or more double bonds in its carbon chain. There are two main types of polyunsaturated fats: omega-3 fatty acids and omega-6 fatty acids. The numbers refer to the distance between the beginning of the carbon chain and the first double bond. Both types offer health benefits.

Eating polyunsaturated fats in place of saturated fats or highly refined carbohydrates reduces harmful LDL cholesterol and improves the cholesterol profile. It also lowers triglycerides.
  • I have a grain-free and/or gluten-free diet. Can I consume the salmon if they consume grains?

Salmon convert the food proteins they eat into their own tissues (fish proteins) by breaking down their structure during digestion (amino acids from proteins are broken down and converted into different tissues through a process called metabolism). Because of this process, the fish will never contain any proteins consumed in their diet in their original form (gluten, etc.). Salmon, regardless of what the fish consumes, will not contain any gluten or other allergenic proteins unless they are processed with other allergens. The fish, like all of our finished, smoked salmon products we make from them here at Honey Smoked, are gluten free. In addition, Honey Smoked Salmon products are Certified Gluten Free by the GFCO.
  • What are Monounsaturated fats?

Monounsaturated fats have a single carbon-to-carbon double bond. The result is that it has two fewer hydrogen atoms than a saturated fat and a bend at the double bond. This structure keeps monounsaturated fats liquid at room temperature. Although there's no recommended daily intake of monounsaturated fats, the Institute of Medicine recommends using them as much as possible along with polyunsaturated fats to replace saturated and trans fats.

  • What is the white substance that is sometimes on the fish fillets?

The substance is called albumin, a perfectly safe congealing of intramuscular protein that may appear in salmon fillets when cooked at a high temperature like that in our hot smoking process. This intramuscular protein is no different than what would find such as in marbled cuts of beef where in this example, fat instead of protein is intramuscular. This is perfectly safe, and poses no safety or quality risk to the product. Any discoloration seen of the white protein occurs by the smoke process, and the amount of albumin production varies from lot to lot. Albumin forms due to the high heat we smoke our products at for safety.
