Ingredients:
- 1 sheet frozen puff pastry, thawed
- 2 shallots, diced
- 1 ½ cups white onion, diced
- 1 cup diced red onion
- ¼ cup sliced red onion
- ¼ cup goat cheese
- ¼ cup cream cheese
- 2 ½ ounces soft herbed cheese
- 2 large eggs
- 6 oz Honey Smoked Salmon (room-temperature)
- 1 Tbsp butter
- Salt and pepper to taste
- Sliced green onion, for garnish
Directions:
Step 1
Preheat oven to 425 ℉.
Step 2
Sauté shallots, white onion, and red onion in butter in a large frying pan on medium heat, and cook until translucent and fragrant.
Step 3
As onions cook, combine cream cheese, soft herbed cheese, goat cheese, and eggs in a mixer until smooth. Fold in cooked onions and season with salt and pepper.
Step 4
Line a baking sheet with foil, and generously coat with cooking spray to prevent sticking. Unroll puff pastry onto cooking sheet. Create a raised edge by folding in the edges of the puff pastry.
Step 5
Spread onion mixture onto puff pastry. Sprinkle red onion slices over the top.
Step 6
Bake until puff pastry is golden brown, about 20 minutes.
Step 7
Remove from oven, and top flatbread with room-temperature Honey Smoked Salmon.
Step 8
Sprinkle with green onion to garnish.
Step 9
