Ingredients:
- 18 ounces Honey Smoked Salmon®
- 1(12 ounce) pkg. thin Asian vermicelli noodles
- 1 cup fine julienne carrots
- 1 cup fine julienne bell peppers
- 1 cup bean sprouts
- 2 English cucumber fine julienne
- 6 scallions, thinly sliced
- 1/4 cup chopped fresh cilantro
- 1/2 head Napa cabbage, thinly sliced
- 2 cups peanuts, chopped
- Store bought Asian dressing
- 1 cup creamy peanut butter
- 1 cup low fat cream cheese (room temperature)
- Juice of 1/2 lime
- 6 – 10-inch spinach flour tortilla
Directions:

Soften the vermicelli noodles in a large bowl by covering with boiling water and soaking for 3-4 minutes or until tender. Rinse under cold water, drain and add to a large bowl. Add the carrots, peppers, sprouts, cucumbers, scallions, cilantro, cabbage and peanuts. Pour dressing over noodle salad mix and gently toss until all is combined.
Next
Make a spread with the peanut butter, cream cheese and lime juice. Gently warm the tortillas and spread one side with peanut butter mixture. Layer with dressed Asian noodle salad and Honey Smoked Salmon®. Roll up tightly and wrap in plastic wrap. Cut in half at an angle or into 1-inch slices.
