Directions:
For the orzo:
• 1 cup orzo pasta
• 8 ounces Honey Smoked Salmon®
• 2 tablespoons olive oil
• 2 cloves garlic, minced
• 2 cups spinach
• 2 cups chicken broth
• 1 tablespoon lemon juice
• 1 teaspoon Italian seasoning
• 1 teaspoon lemon pepper seasoning
• Kosher salt and black pepper, to taste
• Lemon wedges, for serving
Directions
Step 1
Heat olive oil in a large skillet over medium heat. Add garlic and cook for 1 minute until fragrant.
Step 2
Add orzo and stir for 1 to 2 minutes until lightly toasted.
Step 3
Pour in chicken broth and bring to a gentle simmer. Cook for 8 to 10 minutes, stirring occasionally, until orzo is tender.
Step 4
Stir in spinach, lemon juice, Italian seasoning, and lemon pepper seasoning until spinach is wilted.
Step 5
Gently fold in torn Honey Smoked Salmon®.
Step 6
Season with kosher salt and black pepper to taste. Serve warm with fresh lemon wedges.
