Ingredients:
- ½ tsp Kosher salt
- ½ tsp freshly ground black pepper
- ¼ cup matzo meal
- ¼ tsp baking powder
- 1 lb yellow potatoes
- 2 eggs
- ¼ cup finely chopped white onion
- Honey Smoked Salmon at room temperature
- ¼ cup low-fat sour cream or Greek yogurt
- Fresh chives, diced
Directions:

Step 1
Preheat oven to 450℉ and coat a baking sheet with cooking spray to prevent sticking.

Step 2
Peel and then grate potatoes. Using a fine-mesh sieve or colander, squeeze potatoes to remove as much liquid as you can.

Step 3
Combine potatoes, eggs, onion, matzo meal, baking powder, ½ teaspoon of salt, and ½ teaspoon pepper.

Step 4
Scoop tablespoons of the mixture onto a baking sheet. Space them about 2 inches apart, and flatten. Bake in the oven until golden brown, about 8-10 minutes. Flip to cook the other side (an additional 4-6 minutes).

Step 5
Place about a teaspoon of sour cream or Greek yogurt on each latke. Then top with a piece of Honey Smoked Salmon and some fresh chives.
